Cast Iron WOW Lamb

Found some hunks of lamb for a couple of bucks apiece at Safeway, and thought James and I would have a fancy little low carb meal.   I sprinkled each with a little salt on both sides, a let sit in the fridge for a couple of hours.

Took them out when James got home, and threw on some WOW rub.



We wanted a nice warm comfort food kind of meal, so I did my best at low carb mash & gravy, and thought I'd try my hand at mashed turnips.  The only other place I've had turnips before was Scotland, where they serve "neeps and tatties" (turnips and potatoes).  Of course those Neeps went down with good bit of whiskey, so I didn't quite remember what to expect in the way of what turnips were like.     ::) ::)



While those were cooking, I fired up the cast iron with some coconut oil, and got the lamb cookin'. 



I took those off to let them rest, and made up some coconut flour & black pepper gravy in the pan with the lamb juices while James mashed up the turnips with some butter and cream.   




The lamb was awesome (love the sear from that cast iron!!!), and the mashed neeps were a nice alternative to our usual veggie fare.  The texture was certainly different (both on the turnips and the gravy, since I used coconut flour to make the roux), but was a nice side dish that didn't entirely blow our diet out of the water. :) 



Was good enough to take James one step closer to letting me raise sheep next year!  ;)

Looks great Kat!!! Looks like good comfort food!!! I have not used them in a while but have used turnips a lot in pot roasts along with the potatoes and other veggies. Don
