Looks mighty tasty!!  Any reason for starting skin side down?  I would have thought the bone side would have handled to initial heat well enough and you would still get nice crisp skin.

Skin side down gets the fat rendering process quickly which leads to crispy skin.
The bare flesh would probably dry out if I started it that side down.

Found it at central market while I was wondering around their spice section. I was looking for inspiration for a new rub when my eyes saw "coconut curry powder." I love curries in coconut milk and I thought this sounded interesting
Let's just say that I went back for more. I rubbed it on PBCed pork and it was a hit!!

Central Market is bigger and more affordable the Whole Wallet. They stock some very interesting foodie stuff.
