Woke up this morning and assemble the WSM 18.5
Drove to Goodwins and grabbed a pack of beef ribs

The WSM ran at 250 degrees the entire cook with no tending. Ribs were as tender as can be. Wendy made her homemade herbal ranch dressing. It was a good day.

Used Pappys Prime Rib rub

how many hours total did they cook?   Have played around with beef ribs, but not had the best results is the reason for asking.    They look fantastic!   After reading about the smoking cheese post and now looking at these, I'm famished!   To heck with oatmeal for breakfast--going after LOTS of bacon and eggs fried in the bacon grease!

The ribs went around 3.5 hours at 250. I then sauced them and foiled em up for the last hour and a half and they were really tender.

They had Busch 30 pk for 16.99 at Food 4 Less and there was snow-capped mountains on the cans........just had to  8)
