MAK chicken

Jan bought a chicken the other day because she wanted to learn to spatchcock.  I told her I would cook it when she spatchcocked it.  She did that this morning so I MAK smoked/cooked it today.

Only one pic.  Final result.  I think it speaks for itself.

Rubbed down with Annie's Roasted Garlic Olive Oil (thanks again Smoker Pete) and then Jan's Dry Rub.  After the smoke/cook period brought it inside while it was still very hot and glazed with Cattlemen's Brand Carolina Tangy Gold Sauce. The Tangy Gold/Jan's Rub combo is fast becoming our favorite chicken flavor combo.

Great looking chicken, but you were "had," podnuh.  Every female over the age twelve instinctively knows how to remove a backbone (with or without a knife).

Good point Paul but this was the first time she had removed a backbone from poultry.  Notice I didn't say chicken because I am a chicken when it comes to that little woman and she removed my backbone long ago as you no doubt noted at Krewe du Smoke. ;)

I save the backbones and throw them in a ziplock in the freezer along with all the wing tips I cut when doing wings. They make great bait for crab traps unless my wife gets to them first to make chicken stock.
