Gus - was there a rest time after cooking - or did you sear and serve right away?

... Wouldn't you know that it started pouring rain just at the time to sear.

I think that is some sort of unwritten law of Mother Nature.  We wanted to get into the hot tub yesterday because it was snowing, and of course, it stopped straight away.  Then when we got out, it started snowing again.  :o

Plate looks fantastic  ;)

Used the Dorkfood
Only resting period was the time it took to open the vac seal, get an umbrella and walk out to the grill to sear.
