S V? Pre-Sear that steak!

No, I don't have my sous vide thingy...YET.  But we'll order one tomorrow.

In the meantime, I have been poring over all manner of YouTubes, especially on a site call Chef Steps...these folks are all about the science of sous vide along with beautiful (though skimpy) presentation.
They make the case for searing your steak BEFORE bagging it...even a day or 2 before you put it in the bath.  Don't go trying to poo-poo this idea without watching the video.  Then you can holler at me for peeing in the pool.

Interesting video, I've always post seared my steaks, I'll have to give that pre sear a try and see for myself. ;)

Next time I do two I'll run the same test. I wonder if it works on other meats as well.

Pam, are you having trouble figuring out the s v method?  Is the learning curve pretty large?  I'll need to reconsider if it's hard to learn.

I always pre sear a cold piece of meat and then chill for 30 minutes or so. Then into the bath.
