Experimenting with greens beans Susy cooked today...
Found a recipe on line, but can't remember where (I've looked at so many).
This one calls for a 3 hour cook at 183 F to get that "old-fashioned" green bean flavor and texture.
We prepped 2 bags the same way:
1/2 lb fresh green beans
chopped onion
1 clove garlic
1 14 oz can whole tomatoes hand-crushed (don't ask me, that's on the recipe)
1/2 tsp salt
Place the stuff in the 11" X 16" bags and vacuum sealed and into the bath.
when they finish, I'll ice 'em down (quick chill, some call it). One bag in the fridge - one bag into the freezer (part of the experiment).
We'll be doing chicken breasts later, so I'll take those in the fridge and put them in the bath with the chicken to reheat.
We'll see if turns out...
I'm using a much larger container this time. I started with hottest tap water and then added about a gallon of boiling water. This to help get to temp a lot quicker. Then I covered with heavy-duty foil. That helps a lot.
