SV Ribeyes Beets with Horseradish Cream Sauce and Beet Greens

We were out of town for a mini-vacation and returned late afternoon yesterday (Valentine's Day). We stopped at a fruit and vegetable market on the way home that has locally raised grass fed beef. Ribeyes cooked at 130F for a couple hours. They got a bit of smoked sea salt and Montreal Steak seasoning before being bagged. Seared in a very hot pan and fresh ground pepper afterward. The beets and greens went great alongside these tasty steaks!

I have eaten Collard greens, Mustard greens, Turnip greens, Kale, Spinach and so on but never heard of eating Beet Greens.

I have eaten Collard greens, Mustard greens, Turnip greens, Kale, Spinach and so on but never heard of eating Beet Greens.

Savannah, beettops (greens) must be real fresh. They do not keep very long, so ideally you grow them or buy fresh with tops on and cut and use within a couple days tops. But they are very mild and tasty! Not to mention healthy!

We both, of course, have seen fresh beets in the stores but never with tops.
I like all kinds of greens and would like to try beet tops if we can find some.

My Dad has eaten Beet greens for as long as I have know him. For me like Swiss Char needs Lots of butter, salt & Pepper.
