check out Ursula's butt
« Reply #-1 on: August 22, 2012, 10:30:45 PM »
welp, i have never cooked a butt that was this moist and flavorful in my life.

note:  at no time was a water pan involved in this cook.

ya baby, i love Ursula.  here's why.

charcoal nest 3/4 way full.  dumped some lite charcoal on w/ 3 pieces of peach wood and a oak pellet packet.

i'm loving money on my butt (that didn't sound right) and some molasses wouldn't hurt either.

pretty.

everyone in the pool.

smokey, smokey.

look at how even the temp gauges are.  oh ya, the butt looks good too.

3 foils + apple juice.

pulled and very tasty.  i mean real good.

i used my maverick and the temp stayed between 247-254 for over 12 hours on this cook.  this was the best tasting butt i have ever cooked.  i've cooked a few.  i really believe that Ursula had ever thing to do w/ it.  alot of you ppl are my good friends (you know who you are).  get a drum.  if you enjoy bbqing like me and i know ya'll do. get yourself a drum.  its fun to cook on and very versatile.  steaks, burgers, chicken (to die for), potatoes, bacon wrapped corn, ribs and now butts.  my last two ribs cooks have been very good.  ribs have been very moist and flavorful (yummy^2).  its fun.

i didn't get paid or anything to say these things.  i'm telling ya'll because i think you would enjoy it like me.  for under $200 you can have the best smoker you will ever have.  if you want you can name your drums Ursula too.  i'm cool w/ it.  lol.......

Having that big old bone sure didn't hurt as well!! Drum smokers are excellent smokers. The Big Poppa kit makes for a fancy looking drum, but they can be made bare bones for a little bit cheaper if price is involved. Me and Kora Smoker had Big Drum Smokers made out in North Carolina before the UDS craze hit the net and we all learned how to make em more cost effective.

Main challenge would be where to get the food storage drum...where did you get yours if you don't mind me askin....this way if someone is on the fence this info might push em over!!

So you purchase your own drum then a kit to make it a smoker?

Heck I don't know tee. I have seen where they just use a replacement charcoal and 22.5 cooking grate from a kettle to fit in those 55 gallon versions. Just need -8- long bolts and nuts and washers. You can unscrew the top part off the lid for exhaust. Have -3- holes in the bottom that you can cover with refrigerator magnets and you be smokin!!!!!

Just depends if you want a true UDS or if you want a purdy one like the Sparkster has.............

I looked it up on BPS website. Nice kit.
Do you kept the bottom of the drum off the ground or concrete?

The BDS do not come with wheels. I had to buy a drum dolly to move it around.

Food safe barrel locally $20
Cheap weed burner $20 ( if you've ever burned out a barrel in a municipality you've got to have)
Two weber cooking grates 22 in $35
Weber charcoal grate from 22 in $15
Expanded metal $15
Bolts & screws $15
Refridgeerator magnets ( FREE)
Step drill bit $10
High temp paint $15
Total $145 without wheels
By far the hardest part is prepping the barrel, everything else is easy with a cordless drill & a few hand tools.
