Getting the hang of it.

Finally got my Kamado working right. I got a second rack and I put a big tinfoil turkey tray on top to catch any drippings.
I did some ribs for dinner. Marinated in apple cider, salt and crushed juniper berries overnight. Added rub in the morning and set in the fridge for 6 hours. Set my temp at 250 with a little hickory wood and smoked for 3 1/2 hours. At the end I glazed with sweet baby Rays hickory and brown sugar sauce. They turned out delicious. That cider marinade really kept them moist. Plated with the wives strawberry salad.

And those strawberries are huge. Looks like they got crossed with a pineapple ;D. Poppyseed dressing?

Chop a head of Romaine in bite size pieces. Wash, then wrap in dishtowel, put in fridge to crisp up.
Slice one pint of Strawberries
Very thinly slice a red onion
2 teaspoons poppy seeds

Dressing....
2 Tablespoons white vinegar
1/2 cup Mayo
1/3 cup white sugar
1/4 cup milk
Blend and add to salad, mix well.
If you have a little heat in your ribs this is a great cooling salad.
