Cajun Injector Chicken Cooker break in and teaching my little bro to smoke
« Reply #-1 on: September 01, 2012, 02:44:45 PM »
I could have sworn I taught him how to smoke in the '70's  ::)

We are learning how to run this chicken cooker and I cant be more impressed at this little unit. Finally, something affordable that actually works well!!
It has some leaks and I had about 6 lbs of coal in it yesterday to season it and I tried to use it like my UDS but she got way too hot!!
Started with 2 lbs of coal and did a minion and adding a handful of Kingsford every hour and she is steady at 250!!! Not a bad deal.
My brother will take possession of this on Wednesday so until then he is gonna get a crash course on how to smoke Smokeasaurus style!!

Today we are using it like a smoker using the top rack ( you can take off each level and the lid fits each level )
Using Mesquite for smoke and a no salt rub  :'( got some center cut beef ribs on there and will be trying the 3-2-1 method.
Stay tuned to this thread for the entire weekends cooks and a final analysis of the CJ Chicken Cooker!!

Here is a real good video on the Cajun Injector Worlds Best Chicken Cooker which is way better than the one that Cajun Injector originally did:

Beef ribs are finished. This was a very successful first cook. The cooker ran between 250-275 the entire cook. Had to reload 3 times but I think I could have gotten away with two. Had some smoke leakage between the top and middle section but we rigged up a HD foil ring and that stopped. All in All this little cooker holds in the smoke pretty well for being in 3 sections.
Will use it as a grill tomorrow...have a nice evening everyone!!

Took the top and middle sections off and grilled some steaks on the bottom section. The bottom grill is like grilling on an Old Smokey where the cooking grate is a little higher than most grills. My brother thought that was cool and he feels it is a more relaxing way to grill. The lid sits on the bottom section as well and with the two air dampers in the lid it made for very good air control.
See everybody tomorrow for the Labor Day cook!! Hope everyone is having a nice Holiday weekend so far........

I think that might be a great little cooker for those of us too dang lazy to build one. I like the rod setup for hanging chicken quarters.

Thanks all. We are going to smoke some burgers today and then hang chicken halves tomorrow. My brother has a Kingsford barrel grill which he can handle. It normally stays in one place anyway. Since this unit comes apart he will have no problems cleaning it and putting it away.
