Fresh Caught Surf and Turf

Went out yesterday with my good friend Jeff on his boat along with T Bone and his Son. A few shorts and then TBone hooked up with this 23 pounder, good fight these big Stripers. Then I handed off to his Son Nick who pulled in a 22 lbs. Good day for sure. Fillets were shared, there was plenty.

That one half of one side of the fillet, after being trimmed



Froze half and diced up the other half, on the board are two Serrano's diced up, zest of one lemon, Italian Parsley, four Scallions sliced thin and a new can of Lump Crabmeat



All in the pan with some EVOO, lightly fry real quick. Let cool, then the Parsley, about a dozen crushed Saltines, one beaten egg, Paprika.




Formed into cakes, dressed top and bottom with Panko Crumbs and into the fridge for an hour. Then on the Genny in a sauce pan with EVOO, after the turn



Aussie Lamb Chops, Kosher and fresh ground only on the GG's



On the plate, over fresh greens salad and some dressed up Cocktail Sauce

ohhhh boy that's living! What a great catch and a fantastic meal!
