Sorry Pappy,

one thing I have learned on this type of brisket is that it cooks much faster to tenderness than the select grades I cook. I had to do a two hour rest in parchment paper. Wendys daughters came up for supper today......good timing....huh  ::)


The texture and flavor and tenderness on this brisket was something I have never experienced. I would much rather cook only one brisket a year of this quality rather than 2 or 3 that I get from Wal-mart. It didn't even matter if I cut against the grain or with it. The meat was pull apart tender. Come to think of it, I don't think anyone used their forks and knives  8)

I think the drum contributed as well. The brisket had a bark on both sides due to the meat cooking slowly directly over the coals. The rock solid temps don't hurt either.

Ya done good, brother!!  That looks outstanding!!

That brisket that the Turtle provided to the Fall Gathering was one of the tastiest I have ever had.  I fully understand your comments about cooking one of these a year.  As Pam would say, "It's like butta in your mouth!"
