Today was Trisket time! Yesterday I injected the Tri Tip with a mix of Bourbon, butter and Butcher's BBQ Brisket Injection, rubbed it with Simply Marvelous Peppered Cow and gave it a rest over night in the fridge.

This morning I smoked it with apple wood for 2 hours until an IT of 158° F was reached. Then it was wrapped in foil with some mor Bourbon and butter, put back on the smoker for 3 more hours until an IT of 198° F was reached.

Plated with hasselbacks, tartar sauce and aioli:
