I foiled it at 180 internal (I have bad luck with chuckies) and pulled it at 195 and took the MES down to 140 for a one hour hold and got this

Wendy made some homemade gringo salsa ( not too hot ) and we got our tacos on
I was very impressed how the MES worked. It even has a built in food temperature probe and a nifty tube to add wood chips so you don't have to open the door. I have never paid too much attention to Masterbuilt but they make a solid electric smoker......
