Intriguing concept and lots of information. Vertical cookers (of all types -- wood, charcoal, pellets, electrics) suffer from the common problem of producing unwanted flavor components due to the heat at the bottom of them being "struck" by grease, juices and gummy build-up from that process. This takes care of that. I also like the sound of their methodology for controlling white smoke and maximizing blue smoke.
I'd love to see one of these "up close" and actually cook on it.
