wanted to do some ribs for friday night giants game.  and away we go......















the dino bones weren't for me.  for my posse. 







mine were very good too.

The posse looks like they are well cared for!!

It is good to see you cook with a dry water pan in the WSM!! That is how I use mine and with my vents never moved I am around 270 for every cook!!

I think the Cajun Bandit door has a lot to do with it as well, because it is heavier material than the factory door and it seals better as well...........

see, we didn't like the ribs w/ the dry pan compared to the ribs from last weekend w/ water in the pan.  either way it was very easy to control the temps.  both times ribs were good.  maybe just the wrong sauce put on this time.  got more ribs (my wife, no more ribs.  i'll sleep w/ ya if you stop cooking ribs.  maybe tomorrow dear.  todays football, need ribs) to good today.
