what should we cook on today

umbrellas opened, chimney fired up. 



2nd cook.  lets see how we do this time.  last time a tad dry on the ribs.



cutting my wood back.  the 18 cooks differently than the 22.  probably just new.  need to get it more seasoned.





3 1/2 hours later.  oh ya, these look real nice.



time for some shiney.

yes, how did you know.  i like cherry.  i use cherry/pecan mixed too.  need to start weighing out my wood.  to make the ribs better.

I have found that cherry imparts a rich dark color to whatever you are cooking......

I have found that cherry imparts a rich dark color to whatever you are cooking......

what wood imparts a nice golden brown color?

red oak and hickory come to mind. I go light on the cherry with poultry cause it can make it way to dark looking......

Looks like no water in the pan. Do you like your ribs with or without water?
Was there any FL with those ribs?

Sam with a WSM, a heat shield , ( the empty water pan )is all you need.
I foil my pan to make cleanup easier.

Thanks LA. I never did a rib cook without water. Although I do foil the pan before adding water.  Good info.

They really came out great!

no FL on these ribs.  my 18.5 WSM is brand new.  its running hot.  all the cooks so far have been w/ out water.  i think until i get her seasoned real well i will start using water in the pan.  i just ordered myself a brinkmann charcoal pan replacement to use as my water pan (shallower, more room for charcoal to pile up).
