Super Pig Sweet Potato and Egg Hash

After several cups of Sunday coffee, I needed a plan for breakfast.... ???
Chopped up some bacon. Tossed into a large pan, added 2 tsp Super Pig, stir. Added an onion. Then threw in 2 cubed sweet potatoes, more Super Pig, and let everybody mingle awhile with a loose foil cover for 4 - 5 minutes. Needed garlic and green onion too, stirred it up good. Then added a can of green chilies another stir and then dropped two eggs in. Cover again until eggs set. Done! With buttered bread and more coffee, made for a fine Sunday breakfast! 8)

I have only been able to do sweet potato fries. Did some on the grill last night but they have to be thin an crispy... Post like these make me want to like them though...
I don't understand why I don't like them. Both my parents were crazy about them!
