Steak Grilling Question

I have the searing grate and a new 2 Star General. Do i leave off just 1, or both flame zone covers ( only doing 2 rib steaks, nothing else on at same time ), and does it matter if i use left or right side for searing grate ?  Seems like the video's i have seen are usually on the left side.... just wondered if there was a reason.  Thanks in advance.   :)

Only one has to come off.

Since the searing grate only covers one of the Flame Zone covers, you only need to uncover one.  I uncover the left one because it's closer to the Pellet Boss for using the temperature probe.

I wasn't sure if i might develop a bit more heat, or heat up faster with both covers off as opposed to just the one. Since everything is sloped to the right for grease run off i would think using the right hand side for grilling would make for a bit less clean up afterwords ?
