Pork Butt Pulled & Sliced
« Reply #-1 on: September 04, 2016, 12:02:13 PM »
Did the butt overnight Saturday.  Ready to wrap Sunday AM

Three hour rest in the cooler, pulled the bone out clean and that hunk of meat much like a pork loin plopped out.  I like to slice that.

Pulled & sliced, you can see the slices around the edge.

I do butts fat cap down on the keg, I like it when it sticks to the grate.  After removing the butt, come back later for some pork cracklin nibbles

Cleanup on a Kamado is easy.  Drip pan right under the meat, just scrape the grate, drip pan in a garbage bag,......done.

Thanks everyone.  Here's a couple of slices of the meat that was close to the bone.  I don't think this is what's know as the money muscle, not sure, but it sure is good.  Like a super tender moist piece of pork loin with the flavor of a smoked butt.  I injected this butt with pineapple juice and some of the Spiceologist Rasta Rub, jamaican jerk.  Imparted just enough of the jerk flavor to detect.

Dang BOB! That plate is killing me, lol! Very impressive if I do say so myself. I've always enjoyed seeing your cooks over the years. Unlike me, you are willing to experiment and create new things. I tend to cook the "same old same old" stuff. I'll have to add this to the "to do" list. I need to make me an ingredient list of spices and whatnot.
