My wife bought a small boneless prime rib.

Rubbed down with salt, pepper, garlic, thyme and 1/4 cup red wine.

In the WSM with a chunk of hickory.

Thats what i thought but wasnt sure so just went with the 145. I dont like PR so if she dont like it she can do herself next time....YIKES  :o

It looks perfect to me! 140°-145° is just where I like mine!  A nice just barely medium, so if she doesn't like it, I'll be there shortly! ;)

I love good beef at 125°
but since I have to serve to other folks
with larger cuts of beef
my favorite number/s are 135°~140°
if the cut is tender enough

btw- oven cleaner spray will get the smoke film off of glasswear that's been in the smoker
