Coconut Shrimp with sweet sauce low carb

Coconut shrimp and sweet tangy sauce

Kimmie found this awhile back on a low carb cooking site.

Recipe....

25 to 35 large shrimp
1 1/2 cups unsweeten coconut flakes
4     eeg whites
1 1/2 cups of coconuut flour


Sauce....

1/2 cup unsweeten apercot jelly or jam
1/2 tsp red pepper flakes
1 1/2   Tbs of lemon juice
1 1/2  red wine vinager
1     packet of Stevia

1st Coat shrimp with coconut flour
2nd Coat shrimp with egg wash
3rd Coat shrimp in coconut flake
4th Bake at 400 for 15 min's and flip.  You want the cocnut
to brown and crisp up on both sides.

So while the shrimp is in the oven mix up the sauce for either dipping
or you can coat the cooked shrimp like in the picture
