Ultimate Rib Challenge
« Reply #-1 on: January 29, 2013, 02:25:36 PM »
welp, i have been getting ppl asking me which smoker produces the nicest rib.  today we are going to find out.

da players.

18 WSM, little blackie (mak 1 star) & PBC.

to get the ribs to all finish at the same time i had to start the WSM and little blackie early.  4 hour cook for both of those smokers.  2 for the PBC.

there is a chunk of apple in there.

fired up little blackie also burning apple pellets.

i let everything come up to temp (275°).

i'm using sparky's orange sauce and instead gourmet rub on all the ribs.

everyone in the pools.....

at the 1 hour 40 mark i started up the PBC.  got some apple wood for some smoke.

two 1/2 racks for the PBC.

time for some FL.

WSM rib.

little blackie rib.

my favorite part.

some more love.

back on for 1 hour.

the time table was different on the cookers but i think i have the times down to a science now.

PBC rib FL.

great color for all the ribs in my opinion.

the other one is getting sauced for my wife.

my 18 WSM holds temps like a champ.  3 hours into it and i have not touched a vent at all.

WSM rib, little blackie rib & PBC rib.  everyone done at the same time (what planning).

nice color all around.  very please w/ that.

i took the best rib out of each rack.

WSM rack.

little blackie rack.

PBC rack.

alright.  heres the break down.  my wife, daughter, son and myself each took a bite from the bone i cut out of each rack so we all ate from the same rib.  everyone said the same thing.

mak 1 star rib wins hand down.  it had the best flavor and texture out of all 3 racks.  it was very good.

PBC came in 2nd.  i tad drier but not much.  great charcoal flavor.

WSM came in 3rd.  it was alot drier and alot less taste frome the other racks which suprised me the most.  i did learn that i might have to start using water when i cook ribs.  nah.....  i like the dry pan better.   all in all a great test.  i already knew that the mak would when.  it produces the best ribs i have every cook in my life.

There is also a different flavor from meat cooked over coals where the dripping are aerosolized
& on an offset where the drippings are not burned.

Good point. Sparky, did that affect your preference?

no.  it was all about the taste of the rib and texture.  i didn't tell any of my family which rib was which.  it was just a simple test for me to gather info about ribs and what cooker i like cooking them on.

All your ribs are winners, IMO!!  It's nice to have three ways to do them.  Variety is the spice of life...  Sparky, my friend, keep posting your rib cooks, no matter what you cook them on.

Love your post, Sparky!  I've been doing ribs on Weber charcoalers, pellet cookers, stick burners and even gassers for years and, right now anyway (I claim no great expertise with my PBC yet -- too new), my best output is always on one of my pellet machines.  This doesn't mean they are the best cooker, just that they suit my expectations for the final product best -- and my expectations may certainly differ from anyone elses'

Thanks for your time and work on this.
