Very interesting experiment.

WSMs, IMHO, tend to produce a drier product if used w/o a water pan.

I've cooked ribs on an indirect Heatwave, Masterbuilt electric, CookShack, WSM, ceramic cooker and Big Easy... I've found they all require a slightly different cooking technique. (It al depends how lazy I am <lol>!) But I never went to the effort of documenting the cook except for my own notes.

Nice job and great write-up. Thanks for taking the effort.

Great test Sparky, if you don't want to put water in your WSM pan you might try some sand covered with foil. It acts as a heat sink to help regulate temps but doesn't add moisture to your cook. I just bought a second pan for my Char-Broil H2O smoker so I can have one to keep full of sand and one to use with liquids and swap them out as needed.

Great taste testing Sparky! I have to agree with you. My best ribs have been pellet cooked. The best chicken has been from the PBC and Big Easy ;)
