Hanging Yardbird

Brined a 5 lb chicken overnite in a simple brine. Next day cut in half oiled & seasoned with Gary's Seasoning that smoke sent me.
Built a fire in my cajun chicken cooker with briquettes & 2 chunks pecan .
Hung the half birds over the fire.
Woo-Hoo with my beatin, bangin & gasket makin on the cooker I was able to control the temps  ;D
Cooked till temp was 165F & served with black beans with rice & green beans!
Best chicken I've ever had? No but very good.

Looking good.  I'd like to cut up that breast and mix it in with those black beans and rice.  They look mighty inviting.

I have a Cajun Cooker like that...it really smokes well.  I can actuall control the temp in that smoker - believe it or not... :D

I have hung 2 halves like this and was really pleased with the results.  The Cajun folks say you can hang up to 8 halves at a time...have you tried to cook that many? 

When are you coming back this way?  Would love for you to drop in...
