Brined a 5 lb chicken overnite in a simple brine. Next day cut in half oiled & seasoned with Gary's Seasoning that smoke sent me.
Built a fire in my cajun chicken cooker with briquettes & 2 chunks pecan .
Hung the half birds over the fire.
Woo-Hoo with my beatin, bangin & gasket makin on the cooker I was able to control the temps
Cooked till temp was 165F & served with black beans with rice & green beans!
Best chicken I've ever had? No but very good.
