Racks of lamb

Today I cooked racks of lamb: First I seared them at about 580°F on the mini egg, then I finished them medium rare at the big egg at a temperature of about 300°F. Plated up with bell peppers, deep fried potatoes and the lamb cut up to chops and sprinkled with garlic-lemon-oil. Starter was a potatoe-parsnip-soup and for dessert we had an Aha Toro Añejo Tequila.

That has to be one of the most perfectly cooked racks of lamb I have seen WC!

I'm with Tim on this one.  Love lamb chops cooked MR.  Wife prefers medium, however.  I start mine later.  Kinda like TMB cooking steak for Kimmie.
