That lamb is cooked perfectly, and the bones were not covered or burned.  What was your finish IT ?

Did racks of lamb last night, sorry unicorn -no pictures, IT of 130. Was great very tender. None left over.  Followed WC 's lead with addition of lemon olive oil on finished racks
