ok, well one of my new years resolutions was to learn how to use my WSM (big nasty) really good.  i also wanted to learn how much wood and what kind to use while cooking on my WSM.  my goal is to make just as good ribs on my WSM as i do w/ my mak (little blackie). 

so, i'm calling this 6 ozs of apple.



got them buried in KB around my coffee can.



charcoal in.



coffee can out.



ok, i'm good for a 5 - 7 hour burn w/ my 18" ring in my 22 WSM.

rib time.  two of my favorite rubs.  i think you could use just these two rubs on just about everything. 



ok, i normally cook my ribs on the mak @ 275°.  on the WSM i'm trying different temps.  so this cook i'm trying to keep the temp between 255°- 260°.  once i got to 220° or so i started to shut her down a little.



i like to control the temp w/ just one vent.  the other two i shut down to the thickness of this probe.



big smile. 



rock solid @ 255° for the last 45 minutes.



"everyone in the pool"



after 2 1/2 hours.  look at the color.  perfect.



time for some FL.







perfect temps. 



coming out of FL.



thems some pretty ribs.



should have taken them off 15 minutes after FL but i'm on my 4th FT and 3 is my limit.  so they stayed on to long.



welp.  i'd so they were ok.



how could i improve this cook.

1)  i'm thinking less wood.  next time 4 ozs of apple.

2)  spares were the right call.  more consistent ribs over BB's. 

3)  raise heat next time to 275° to compare texture of ribs.

4)  only have 3 FT's next time.   ::)

It is easy to oversmoke with a WSM..they are that efficient. I was only using one fist sized chunk if I recall.

Your ribs look as good as ever......wouldn't be able to tell what pit you had them in.

I'm gonna try that 'coffee can' trick in our big Blue October.  With a pair of #10 cans.  ;)

Whenever I read "Sparky is going to foil love with his ribs", my mouth starts watering, big time!!  There is some good stuff coming for your "foil love".

I learn something every time I read one of sparky's threads. I gave some serious thought about selling my WSM, but I'm going to try the air technique he does with his. Thanks buddy.

Those ribs look excellent Sparky, Do you ever use a rib rack? I want to get a rib rack  so I can cook indirect 3 at a time. Just wondering how much that changes cook time etc..

i like to cook my ribs flat.  i do have 3 mak rib racks that i never use.  the cook time should be the same flat or using a rib rack.   8)

yeap.  pour a full chimney of hot coals on top of a 1/2 full charcoal ring.  and leave all my vents wide open.  i've gotten her up to 350° for chicken.  yummy.   8)

Next time just use some Patent Pending TendaRub rub on them before you foil for fall off the bone ribs ;)

Looks like you have things WELL under control from here.  I have been meaning to try the coffee can trick instead of the traditional Minion method.  Thanks for the reminder.  As for the amount of wood, I guess it is all up to preference and wood type.  I normally go about 5-6 chunks of hickory in the 22.5 WSM, but I like things pretty smoky.
