A little beer can chicken on the UDS

The wife is not too fond of chicken on the bone... I convinced her to let me do a little beer can chicken.. I did have to slice her some breast meat and pulled the rest... Needless to say she loved it...

The skin was a little rubbery at first.. Once I had the internal temps at 160ish, I let it crusie a bit with the lid off.  UDS temps go through the roof!...   Thats what caused the wardrobe malfunction (last pic)!
