Stuffed Pork Loin on 3 burner Brinkman

I got a 5 lb boneless pork loin that I wanted to stuff, and cook in TBE cooker. Unfortunately it was tooo long to cook horizontal in TBE, so it ended up on the Brinkman. After stuffing the loin, I tied it, and gave it a good homemade rub. Threw it on the grill with a good supply of apple wood for more flavor. It took about 90 min. to come to temp.  Served it with a potato packet cooked on the grill and asparagus Milan style, (grilled first until semi-tender, placed in buttered casserole, 3 beaten eggs over all, and topped with Romano cheese).

Great cook. Nice execution on the flattening the pork. Looks easy, but is tricky!

Well, so much for me thinking you cant smoke on a gasser. That loin looks like it came off of one of my old off-sets. Very Nice.

Well I kinda threw it together on the fly. But here is what I put in the stuffing.
1 1/2 C bread crumbs
1- onion, chopped
2- cloves garlic, minced
1- egg beaten
1-stalk celery, chopped
handfull Italian parsley, chopped
1/2 C Romano cheese, grated
S & P
1/2 tsp oregano
It was a 5 lb loin, I used about 3/4 of stuffing.
Came out very tasty!

Smoke , with an amazin smoker tube , 1 burner on low & a heat shield  & searing on high to finish ,you won't get a smoke ring BUTT
I've cooked ribs you would swear were cooked on a old time pit.

Good looking cook.  This technique takes a little time, but it is worth it
