Little Butt on the big cooker!

I was digging around in my meat freezer looking for ribs & found a cryo-vac package that had leaked  :o
It was a 5 lb butt I had bought on sale & vacuum sealed 2 months ago.
It wasn't freezer burned yet, but I decided I'd better cook.
In a water bath for 30 min , partially thawed.
Coated with Sweet Baby Rays to hold the rub & some homemade rub.
Cooking indirect in the main chamber in my Horizonal cooker.
Charcoal bed, plan on using oak for main fuel.

Smoke it's going with me if I have to mount it in my pick-up bed ::)

LA is keeping it real. That is an old school charcoal and wood smoked pork butt. Bet that sucker pulls nice and easy.

Very good. I think I like little butts better, cook faster, more seasoning area & smoke.
Plate with mixed beans & corn.
