A Cook for Smoke
« Reply #-1 on: August 30, 2013, 10:51:27 AM »
Sometimes I cook for something to eat, sometimes because I have something that needs to be cooked & sometimes I cook for entertainment ::)
Well this is a rare cook that covers all those bases & also for Smoke to dream about while his cookers are in transit! It's a GRANDSLAM 8)
My chest freezer was unplugged for about 10 - 12 hours Sunday nite & while most items stayed hard frozen a couple things on top got slightly soft.
A brisket & a rack of ribs developed air leaks in the cryo-vac & I know this leads to freezer burn so they needed to cook.
I usually take the third Friday off as comp time , I had forgotten a co-worker had switched with me & I had today off ;D
I was going to cook on the Kamodo as a "set & forget cook "but what's the fun in that ::)
All right small charcoal basket with a pecan log & charcoal in the firebox of my "offset"
It'll burn about 4 hours while I run errands & then I'll feed with mini-logs.
Lightly trimmed the brisket for less mess in the cooker , no freezer burn yet.
Cheap mustard & homemade rub ( this batch a little too spicy hot for me) & on the cooker!
Pics at start!

Just lit fire

My folded space saver offset

Whole packer on the smoker

Just reminding Smoke what a fire looks like at start of a cook!

And now you can get pre-made pulled pork in a plastic container. What does he need any smokers for?

Don't tell anyone, but I've discovered a secret that allows you to use your offset , feed it wood & not make it too much work!
At six hours the brisket is panned, tightly topped with foil & on the upper rack of gasser @ 250 till done ::)
