2nd best butt i ever made

cooked another one on the big nasty.  might as well sell both my maks.  family only like food coming off of charcoal. 

time for experiment.  the last butt I cooked on the WSM 22 I had a bunch of left over coals.  so, I thought why not use the WSM 18 ring.  not a bad idea.  logic seems sound.  so, I packed it tightly w/ coal and 4 chucks of this bourbon wood.



it's from bourbon barrels that they cut up for bbq wood.  cool huh.



10 coals getting ready.



best butt condiments. 



I drown this butt w/ FSB and molasses.  looks good.



oh T.  i'm out of FSB.  need to order some more soon.

big nasty coming up to temp.



damn.  does that butt look good or what?  why yes sparky.  that's great looking butt you have there.  why, thank you.  that FSB and molasses makes for fine fixins'.



morning time.  everything lookin good.



I believe were done.

a little apple juice and the very last of my FSB.   :'(



after a few hours of resting.



pulled like a charm.  clean bone.  good ring on it.



it's pretty.



bagged up for snacky poo's.



welp, it's snacky poo time.  that didn't take long.  pulled pork nachos.  big triskets, pork, cheese, bbq sauce.  warmed up.  2 FT's and a plate of these and i'm a happy camper.

Excellent job sparky, love the PP nachos.
I have a very love-hate relationship with my wsm. I'm always fussing with the vents to maintain a temp. It's user error for sure, just haven't figured it out.

ya, the 1st best was the one I cooked last weekend on the WSM.  last weekend I used apple wood.  this butt I used bourbon/oak wood.  you could really taste the bourbon threw the meat.  i liked that part.  i also wrapped this one at 180° so i could run some morning errands.  the last one was taken to 203° then wrapped.  i used molasses and FSB on the last on too.  charcoal rules..... at least in my house.   :D
