So I took out a couple golden taters...
And some bacon since it is bacon day...
Also some SP...
Cooked the bacon at low temp on the griddle...
Back to the taters. Nuked in the microwave and then sprayed with canola & coated with BP jalapeño salt...
Into the tray...
Smashed down with a coffee cup...
Butter...
Cheese...
Remember the bacon...
Goes on top...
2 1/2 hours and the Tri-Tip is ready to come out of the bath...
Not so pretty...
Now to sear it in all that bacon grease...
Taters come out of the broiler...
Now ready to slice...
Looks pretty good. Slicing like butter...
Even cook all the way to the tip...
All sliced up...
Plated with bacon mater smasher and salad topped with SP bacon of course...
So was it good? You bet your arse it was! Very, very tender and great flavor. Milt's pellets provided a fantastic smoke flavor. Just plain fantastic!
But Tri-Tip is a very tender meat at any temperature regardless IMHO
