I actually edited this video and it STILL came out over 7 minutes...I won't blame you for NOT watching.
Instead of trying to post pics and type in the story  it is easier for me to upload the video.

From one movie producer to another, good job! And, nice looking ribs. And, they do look nice and moist. Save me one.

Question: why do you cook your ribs meat side down on the grill of the smoker?

Jaxon,

That was one great video. The focus, color and sharpness are spot on! Sure a few more edits, you might have got it down to 5 minutes... but who cares - it was well worth watching! One (completely unsolicited) comment - you might want to do your video with out worrying about audio - or just unlink the audio when in the editing mode, and then add a voice over as you edit. This will give you MUCH more flexibility as you edit. You can make cuts where you think they are good and not worry about ruining the audio / flow. Once you have the video where you want it, you can run it in your editor and add a voice over. Just a thought.

I enjoy your videos - both from the production value and the education. Thank you!

Good video Jack. The audio was a bit low coming from my iPad but good overall.

Jaxon, I would watch your videos no matter how long they are. What I like about them the most is the fact that they are just Backyard Jack videos and tell a story that is interesting and straight from the heart. You could have all the production values in the world, but then it wouldn't be Back Yard Jack Productions. And, by the way, the dino ribs looked great. Keep up the good work.

Thanks y'all...the beef back ribs are pretty easy - not as labor intensive.  Plus, they are tasty.  When you pick up one of those ribs, you know you have a hunk of meat - cave man food.

Ed, I have seen how the smoke and heat move around in my smoker and I believe I got better results with the meat side down.  The heat and smoke seem to swirl upward from below the meat instead of coming down or even moving laterally across the ribs - if that makes any sense.

Right now, I am doing one rack at a time to experiment with the smoker as well as the ribs.  I'm trying different techniques, etc until I find one that will give me consistent results.  Then I will feel more comfortable about cooking multiple racks at once - of course, that'll change things up inside the pit as well.  Ah, well, I guess that's  what retirement will bring...more time to practice.

B T W, Deb made a trip to WalMart to pick up another couple of packages of those Beef Back ribs.  she really likes 'em.

I think the way the smokestack outlet is at grate level, I am gonna do my butts and briskies fat cap up and my ribs just like you did.

The next time you fire your Pecos up, it would be really educational for us seasoned veterans and stick burner newbies for a little instructional video of how you initially light up your pit and get it to its cooking temp.

I cant tell ya how many other sites have folk on there asking how to light up an off-set. It would definitely direct more people towards our little home when they google it. Just think how happy they would be when they find your instructional video.  :)
