Crazy/Busy weekend.    Hal4UK and I went through 42 racks of ribs and close to 65 pounds of chicken.

A few pics that I had time to snap. (when my phone wasn't covered in sauce/grease/smoke/sweat)

The interior of the new Backwoods Competitor.   Getting a nice patina now.    ;)




A late afternoon 6 rack order - just takes a fraction of the available space.   We were playing with some featherbones in the pan below.

Using the Chubby as a UDS style chicken cooker.   No heat diverter - just let them drip on the hot lump for that smoked/grilled flavor.




Exhausted today!

Wow! Those are some very fine looking ribs and the chicken is pretty darn nice looking too! Nice job!

I'd like to be able to get that look you have on that single rack o' ribs with the uniform way the meat pulls back from the bones. 

Any tips you can share would be appreciated...

We run a Food Truck of sorts on the weekends.   (concession trailer parked in a warehouse on a VERY busy road)

The BWS Competitor has a large built-in water pan, so we are cooking with heat/smoke + tons of moisture.

Royal Oak lump, and just a tiny bit of hickory.   It's *real* easy to over smoke in one of these things, as it is a reverse flow.

We make our own rub - a fresh batch every weekend morning.   We mop them with a glaze that is based on our own Sweet & Spicy BBQ sauce.  Just a light coating for color and moisture.

Flavor?   TASTY.    ;)
