Rib tips on the drum

Rib tips for lunch today!
I saved these off of the spares I cooked last week. These were dusted with blues hog rub and smoked with a couple chunks of apple wood.

After a couple hours of smoke and ready for some foiling with apple juice and margarine.


Out of the foil now and two of these got sauced with bone suckin sauce.





Tips and some cracklings.. Awesome!

Every time I do ribs for competition I wind up with lots and lots of really fine meat that I treat exactly as you have.  It doesn't have to be "traditional" bones to be mouth waterin' good!

Really nice looking rib tips - I like 'em almost as much as the St Louis rack they were trimmed from - makes me want to cook a rack of spares (I don't bother to trim because it's two taste treats in one for me)

So much to cook, so little time...  :D

Thanks for the kind words everyone!
I've found myself looking forward to these more than the ribs themselves lately. I used to just cook them with the ribs but no more.
The tips are like candy to me. The next ones I do I'm going to try fixing them up like burnt ends.
