I'm STILL lookin' for beef ribs with meat on 'em.   Those look real meaty.

Thanks guys.
I took a rack to work and before 10AM it was gone. No beef ribs for them. I had the last one for lunch with the rest of the FS&B rack. If I see those beef ribs again I will buy more then one pack. Very, very good.

Since you didn't foil them, did you baste them with anything? I always tend to get things too dry if I don't foil or baste with some sort of mopping sauce.

No foil or baste. I did put water in the bowl and I've found that does make a difference for me. I know I've been told time and time again that the water in the bowl doesn't really help but I find that it does.

Never heard that from me RAD ;)

The water bowl adds humidity so that smoke is better absorbed by the meat and the humidity keeps things from drying out. It also does catch grease and insulate the protein from direct heat. And can help keep the temps more stable by absorbing/releasing heat.

When smoking chicken I would not use the water bowl however due to the moisture content is really high in chicken and not needed IMHO.

I use a water bowl, but it still  seems to be dry if I don't foil. I thought maybe basting might help. That is the reason I turned to foiling.

No question that the water bowl gets the drippings!

I remember some who would swear that the bowl is only needed as a heat shield and would fill it with sand vice water. I have found over the years that I like to a add a liquid in the bowl.

I find that when I foil the ribs they get too soft for me. I like the tug of the meat when I bite into a rib.
