Ribs on the new Broil King

FINALLY got around to doing some ribs on the new grill. Actually first time doing baby back ribs. I was debating on how I wanted to cook them.
Boil them first on the stove? Nope.
Wrap them in tinfoil, 3-2-1 method (didn't know what that was at the time). That thought did cross my mind.
Settled on the indirect method (no foil). Two burners going (both on low) to maintain about 225*. Pan of water under the ribs. Apple chips in the smoker pan. Cooked for three hours. Put the sauce on the last fifteen minutes.

They were tasty, good smoky flavor and meat was moist and somewhat tender. NOT as tender as I was hoping for. Open for suggestions. Thinking about the 3-2-1 (actually 2-2-1 on the gasser) next time???

If you want them more tender add an hour of foil time to the middle of the cook. Finding the right balance will take practice using your cooking method.

Some people like their ribs fall off the bone tender. I like mine firm but complete meat pull away from the bone ;)

No need to boil to get tender ribs.

For me anyway I set my temp at 225F and don't touch it.
All rubbed up and onto the smoker for 3hrs
Into the foil, little butter, honey, brown sugar. Back on the smoker. I start start checking to see they are done after 1 hr. Never get close to 2 hrs.
Back on the smoker, sauce and remove when the sauce is set.

This is my routine for now but is subject to change to obtain the perfect rib. I'm not there yet.

Next time doing the foil. I've had an old friend recommend that also. He said he's done over 50 racks this way and even though the principal is the same, the results are different.

Ribs look real tasty! I don't have anything to add to what has already been said about getting them tender other than
what has been suggested. It is really trial and error to get to the degree of tenderness that you want.

Muebe is spot on!  It'll take some experimentation to get them the way you want them but that's half the fun and you get to eat all your tests  ;D
