Armadillo eggs and meat balls

Since a longer time I've been craving for armadillo eggs. Today I filled some Jalapeño halves with a blend of paprika chili cream cheese, Simply Marvelous Sweet Seduction Rub and shredded Swiss cheese. Then they were warapped into little patties of ground beef and pork. These eggs were seasoned with some more of the rub and panko crumbs.














With the leftover cheese I filled some meat balls, that were seasoned with Simply Marvelous Sweet Seduction Rub, too, and then wrapped into a slice of Super Pig powdered bacon.







That all was cooked on the smoker at 240°F for 2 hours with apple wood smoke.





Time to relax with a Bavarian Weissbier... ;)



After 1 hour:



After 1,5 hours the meat balls were glazed with BBQ sauce for a first time...



...and for a second time after 2 hours.



15 minutes later the food was pulled and plated with some slaw.

Outstanding. I like the addition of the panko. It gave them a really nice flaky coating.
