Bacon Cheesy Onion Blooms - Easy!

Bacon Cheesy Onion Blooms
Adapted from a BBQ Pit Boys recipe.

These are super easy to do and work equally well as an appetizer or side dish.
They're a hit with our family & guests every time!


All you need are:

- Medium sized Onions (sweet onions, like Vidalias, work best)
- 1 Strip of Bacon per Onion
- A sharp knife & Cutting board
- Your favorite BBQ rub
- Some shredded cheese


Peel the onions, trim off the stalk & root ends, & cut in half (sideways). Cut across the onions, scoring into sections, being careful not to cut all the way through. Leave about 1/4" or so uncut from the bottom.


Sprinkle on your favorite BBQ rub and place them in the grill or smoker. A small pan makes things much easier.
Don't worry about Pit temp, just put them along side whatever your cooking.



While those are catching some smoky goodness, partially cook the bacon and cut into pieces.


When the onions have softened & started to open up, top with the cheese & bacon.
Close the lid to let them finish cooking & the cheese melt.
