Crunchy Chicken and Rings
« Reply #-1 on: May 29, 2014, 07:05:38 PM »
I decided to try another way to get crunchy chicken on my cooker.  Today I marinated the legs and wings in buttermilk for
about 4 hours.  I then crushed some French Fried Onions and seasoned them with garlic powder and Chicken Savor.
Chicken was dipped in the crushed onions and getting ready to go on the WSM.

I am using my Weber Smokey Mountain tonight.  I had planned on using my Traeger Jr, but due to pending thunderstorms
I decided against messing with electricity.  I am using RO lump charcoal with one small chunk of cherry wood. No water pan,
just the second rack between the chicken and the fire.

Chicken after the flip.

Chicken is done.  It took about 45 minutes at 350 plus on the WSM.

Served with homemade onion rings and cob.  Onion rings were battered with McCormick Produce Partners Zebbie’s Onion
Ring mix.

Chicken came out real tasty, juicy and crunchy.  I would have liked to have seen more of the breading stick to the chicken,
so will have to work on that. Overall a great Thursday night dinner.

Nice looking meal HOS! Would a finer grind on the onion rings have helped? Maybe an egg wash?

I believe it may Pappy. I just used my hands to grind the rings. Next time will use the food processor and
go with an egg wash.  The rings definitely had a good flavor to the chicken.
