Standing Rib Roast

If this doesn't convince anyone to try SV nothing will.  ;)

Put a standing rib roast (USDA Select) I got from my local grocery store (Smith's) in the SV bath @ 130F for 8 hours yesterday. Since it was getting late I put in in the fridge overnight still in the vacuum sealed bag I did the SV cook in.

Today I pulled it out seasoned it with fresh ground pepper & sea salt and put it in the BEESR on HI (15) for 30 minutes for the sear, preheated the BEESR for 15 minutes before putting it in.

Here is she is in all her glory a perfect medium rare all the way through.  And for the tenderness, well it was just as tender and juicy as any prime cut I have ever had anywhere.

Thanks, it was a last minute decision to use the BEESR, I was going to pan sear it like T did his but when I looked out on the patio and saw the BEESR and the Traeger staring at me begging to be used.  I went with the BEESR because it can get up to 525F vs the Traeger Jr that only goes to 450F.  I'm sure the Traeger would have done a nice job too, I just wanted to get the highest heat I could get for the quickest sear.

Wow!!! Looks awesome!

Good choice on the BEESR! Better to encircle the meat with infrared energy to produce a nice crust and sear ;)

Thanks, I think the BEESR is going to be my #1 choice for sear now that I have seen the results.

Probably true but I don't want to destroy my taste buds again with Schlitz and Old Style.  :o
