Finished the cook, but didn't have time to post.
So about 20 hours later I took them out.



Out of the bags and ready to sear.


Searing on the weber.


Served on a bed of sauteed spinach.


Overall I like it but it was not the flavor or texture I was looking for. So I left the others in for another day (48 hrs total). When I tasted it after the additional time I got the texture I was looking for. It was very tender. I still wasn't overly excited about the flavor, but that probably was due to the rub I used. It was something I got off the internet. Next time I will leave it in for 40 hrs and just try  it with Super Pig and/or a teriyaki based marinade.





Why couldn't Noah have swatted the 2 mosquitoes?.

Looks tasty even if it isn't dialed in the exact way you want it yet, that just means you get to keep making it till you get it right ;D

Yeah the texture is where I want it so now it is just experimenting with different seasonings/marinades.
