Here's something to whet your appetite, fellas. Two racks of pork ribs, cut in halves, and one whole chicken split in half. Trying out a new homemade rub on the chicken and using my old standby for the ribs. I also added four small chunks of apple wood into the charcoal basket. Will have some post-cook photos in about four hours or so.

Dinner's ready! Pulled the ribs off at just a shade under four hours and the chicken at the standard two-hour mark, the last 10 minutes crisping up with the lid off. I think this was also the first time I cooked ribs to completion without foiling them and they were sufficiently tender. I'm happy with the final result.
