Wow, it's hard to believe that this is our 4th Thanksgiving that we have been in business, time flies! We are flooded with turkey questions this time of year so I wanted to post a few pointers. Definitely check out the turkey video, know that cook times will vary, IT'S IMPORTANT TO FOLLOW THE LIGHTING INSTRUCTIONS THAT COME WITH YOUR PBC IN ORDER TO HAVE GREAT RESULTS :) We recommend just using olive oil and all purpose rub on your turkey however, it's all about preference.  If you want to add wood, only add a small handful of wood chips not chunks as this will be to overwhelming and too hot. Here on the Left Coast not so much
I saw one at a Backyard Contest where I was judging

Most KCBS cooks are using thighs or legs  cooked in a butter bath
