Finally got to do some mayo coated chicken. Seasoned with Head Country. Some spares with the usual Zacks Hickory Rub and a link of Sweet Chipotle sausage that a co-worker gave me.


The smaller piece is the trimming from the spare.




















No sauce on the ribs cause I just plain forgot. They were great. Nice charcoal flavor and extremely moist. Chicken was great also.

Oh, yeah, that looks mighty good. 

The barrel smoker is the ONLY thing Deb wants me to use to cook her chicken.  Only difference is...ours is made by Cajun Injector.

B T W, do those rods stay in the whole time, or can they be removed for easier access to the food?

They can be removed but Noah recommends they stay in place for the cook. The barrel was designed to run at maximum efficiency with the re-bar in place.
