Title: Partially cooked
Post by: LostArrow on February 16, 2015, 10:25:05 AM
When smoking its not a lot more work to cook 3-4 butts as one !
With a Foodsaver it's easy to package up leftovers.
What I do now is partially smoke leg quarters , butts & ribs & vacuum seal.
Especially when using in dishes you don't want all the fat to have cooked out.
Finishing butts in a crockpot just tastes better if .more of the fat cooks with it, much better than reheating an already cooked butt.
I usually pull butts from the smoker after 5-6 hours , if using a thermometer about 165, before the stall.
For the parades Saturday finished 3 butts & for Sunday used leg quarters for the Jambalya .
Freezers empty now so planning a cook this weekend weather permitting.
