Title: Wisc Cheese Curds

Went up North for what could be the last good weekend of sledding.  Picked up about 5 lbs of curds - reserved 3 lbs for smoking.

Fired up the Big Kahuna with apple wood chunks.  Smoked for 2 hours, overnight in the fridge and then vac sealed.  Now the long 2-3 weeks of waiting.

Linenkugel, gravlox and smoked cheese curds.....that is my favorite for winters up North with my kids..... ;)

Looks good!!! I love the cheese curds just as a snack or in poutine. I have never had real fresh curds, the ones I can get don't have any crunch to them. Don

I was just reminded that we are going to New Glarus on Sunday. So we will definitely grab a few bags of curds to smoke.

That's what I said Pam, they are supposed to be crunchy or squeaky! I read where you have to get fresh ones for that. Don

I have tried to find fresh ones in my area and cannot.  I think that the fresh ones have a short shelf life and that may be the reason?  Maybe I will have to move from Florida to Wisconsin.  I think that I will suffer without fresh curds.

You do not have to go to Wisconsin for fresh curds! Check your area for dairies or creameries that make cheese. Up until twenty years ago here in central Illinois my uncle worked for a dairy that's main function was processing milk but they did make brick and muenster cheese. Once a week my uncle would give my family a waxed lunch bag of curds from that days' processing. We never fried them, just ate them right out of the bag. We didn't call them curds either,  no they were "squeak cheese"!  ;D

Definitely squeaky.
Not all curds are created equal - these have a rich cheese flavor.

Don fresh curds are relatively soft, like biting into a piece of cheese.
Are you thinking of battered and fried curds - which also delicious and considered one of the major food groups in Wisconsin
